This was a complete and total accident. And it tastes WONDERFUL!
In food processor, chop the following. Measure to taste, but here's what I used.
3 stalks celery
1/2 sweet onion
1/2 red cabbage
1 c cooked ham
Mix in large bowl with following:
4-6 cups cooked elbow macaroni
1 tbsp. mustard, any variety.
mayonaise to taste... I used nearly a cup
3 3-minute eggs, STILL HOT!
1/8 cup dill pickle juice
black pepper, seasoning salt to taste
1 tbsp. sweet pickle relish
curry powder to taste
Stir thoroughly, while eggs are still hot! Make sure you break them up well with the spoon!
Here's the secret: the vinegar in the pickle juice combines with the blue color in the red cabbage. After awhile or , the egg whites take on a greenish tint! Just like dying Eater eggs! Especially if the pickle juice has a yellowish green tint to it!
It tastes wonderful! Much better than traditional macaroni salad, smoother than cole slaw, tangier than egg or ham salad.
Kids ought to LOVE this! The macaronis turn PURPLE, too! The warmer the macaroni, the faster it dyes, just like the eggs!
WARNING: I do NOT recommend this dish for New Years football parties!
Don't think it would go well with hang overs! LOL
